Let me just say: I love using Ravioli as a replacement for the cumbersome lasagna noodle.

This Ravioli Lasagna with Sweet Italian Sausage recipe is super straightforward and even includes a stupid simple homemade marinara sauce that is better than anything you’ll get off a shelf. Plus, it’s a great starter for developing your own variations best suited to your individual palette.

Before we get started, let’s get one thing out of the way. You don’t need to make your own fresh pasta. To that person about to comment “BUT fresh pasta is so much…”. Look I get it, homemade pasta is delicious! But we have kids, and there’s plenty of great options out there nowadays. Weekdays call for keeping it simple and delicious. This ravioli lasagna with sweet Italian sausage does just that.

This ravioli lasagna recipe can move as fast or as slow as you like. You can very easily manage multiple things going on at once if you want to maximize your time. So relax, pour yourself a beverage, take it easy and you’ll be there before you know it.

I used these small loaf pans I found for under 2.00 apiece. Perfect for making batches and sealing with cling wrap for tomorrow’s lunch! (or midnight, shhh…) and the best part? NONSTICK.

One of the best parts about this ravioli lasagna is how much comfort it can hold. Warm, cheesy, just a touch of heat. Mmmmmm… Perfect for the colder months.

Ravioli Lasagna with Sweet Italian Sausage

SO GOOD and deliciously cheesy! 


Ingredients

Scale
  • 1 24oz package cheese filled ravioli
  • 16oz mozzarella (full fat, ball or log) pull this apart into shreds
  • 1 teaspoon oregano
  • 1 tablespoon red pepper flakes
  • 2 tablespoon fresh basil
  • 1lb. or 1 package of links of Sweet Italian Sausage (removed from casing)

Marinara sauce

  • 1 28 ounce can San Marzano tomatoes
  • 1/4 cup olive oil
  • 5 Garlic cloves (minced)
  • 1 Shallot (minced)
  • 1 tablespoon basil stalks (minced)
  • 1 teaspoon (or 3 finger pinch) kosher salt
  • 1 teaspoon red pepper flake (to taste is fine)

Instructions

  1. Preheat your oven to 400 degrees.
  2. Start by browning your Sweet Italian Sausage in large skillet over medium heat. Heat your olive oil in a large saucepan over medium. When this is done, drain and set aside.
  3. Ready a generously salted pot of water for your Ravioli. Keep this just before a rolling boil.
  4. Marinara: Add olive oil to a saucepan. When the oil is hot (but not smoking) and your garlic, shallot, and basil stems. Cook approx. 45sec or until lightly toasted. (this happens quick, so be careful not to burn)
  5. Pour in your tomatoes and season with kosher salt, red pepper flake, and a few extra basil leaves. Bring to a simmer. Let simmer for 10 minutes, stirring every few minutes to prevent any sticking caramelization. After 10 minutes, blend with hand mixer or pulse in blender. Return to pan and add your sweet Italian sausage directly to the sauce. Continue heating on med-low for an additional 5 or so minutes. (to keep warm and let the flavors develop)
  6. Turn up your heat on your salted water to a boil and follow package directions for Ravioli. (al dente works best here)

Assembly: In your chosen baking dish, place a small amount of sauce in the bottom. Alternate layers like this:

  1. Ravioli
  2. Mozzarella shreds
  3. Sauce

Bake for 10 minutes or until the cheese has completely melted and broil for an additional 2 to get the crispy bits. Topped with chopped basil, oregano, and red pepper flake. Bonus points for parmigiano reggiano.

 

Notes

This is definitely a dish that benefits from the ability to multitask. A little light prep puts you ahead of any sharp turns in the kitchen to get you out in no time.

Can omit red pepper flake for the kiddos 😉
